Yesterday was tough. To cheer myself up, I pulled the strong white flour out of the cupboard, picked up my Paul Hollywood & set to baking.

I decided on wraps as I had everything I needed in the cupboard. I was feeling pretty lazy & didn’t want to leave the house!

This recipe from Paul Hollywoods how to bake is easy & straightforward to follow & actually a lot of fun once you start frying the little dough discs. It was quite satisfying watching the dough bubble up. They bake super quick!

Be warned, this creates A LOT of smoke so open a window! I also made my wraps pretty small, great for dipping in soup but not so much for wrapping!! Ha!

Spent a morning in the kitchen this weekend, inspired by vegetable based recipes I made these beauts.
Ginger beetroot cupcakes & chocolate beetroot cake.

Earlier in the week I made pineapple & courgette loaf. It was pretty tasty but pretty ugly looking hence no pictures! :-)

You can’t go wrong with jammy donut muffins but ideally I love a slice of Victoria sponge with fresh strawberries!

Here I am again, jumping back into baking! I didn’t realise how much I missed it until today when I was baking for myself and no one else.
Today a nice white loaf. Tomorrow, who knows… Suggestions?

I did a spot of Easter baking yesterday.
I avoided the very popular creme egg brownie that is doing the rounds this year and instead made these devil chocolate cupcakes with a creme egg inspired icing.
The icing was yellow and white like the egg yolk in the mini eggs but they kinda blended together when I popped them into the icing bag! Never mind, the adults still ate these as quickly as they could!

The need to bake came over me while at my boyfriends place this weekend.
I found this lovely recipe which is super easy. Throw it all into a pan, mix and into the oven for 10mins.

It was Mother’s Day over the weekend and what’s better then a home made cake as a gift!?
I baked this blueberry and pecan muffin cake.

Was good although if I were to make it again, I’d chop the pecans and have them throughout the cake instead of just on the top and perhaps use summer berries to give a little more variation on flavour.

My housemate spotted this recipe in my Paul Hollywood how to bake book.
I can’t resist a lemon drizzle cake so made it over the weekend and I’d say its the best lemon drizzle cake I’ve had.
Light and fluffy with just the right amount of zing.
It’s made with lemon curd in the sponge rather then lemon juice or zest. A definite must try.

It was a pretty tough work week last week so in order to unwind this weekend. I baked! 
To help brighten a snowy Monday morning, I’m bringing work friends these beauts. Peanut butter and white chocolate blondies. 
I think perhaps I made them too thin but they still taste pretty good *wipes crumbs off face*
